I’m Jordy van Ettinger, 25years old, from Netherlands. I have worked as a pastry chef for the past five years in a beautiful patisserie two-star restaurant called Aan de Poel at Amstelveen. It is very different in a Patisserie kitchen than in a normal kitchen because a pastry chef is not a Cook.
In the near future, I hope to start my own chocolaterie, so I can make my own bonbons, do pastry workshops and focus my attention on dessert development for restaurants.
My style in pastry is very classic with a new twist. None of my desserts looks same. However they do have one thing in common, The flavours are always pure and recognisable with a lot of colours. One of my heroes is Escoffier. This man reminds me every day that the base of pastry is the most important thing in our Job!
