My name is Joshua Retzer from Australia, and I’ve been professionally cooking now for seven years, simply starting off as a kitchen porter who wanted nothing less than to be a cook yet found myself entwined within the life which is, indulging in honing my craft and quickly adapting my set of skills via my own philosophy. A philosophy which is ever changing not leaving me to be squared up in a box that tends to get smaller as the hours grow longer. I believe everyone is entitled to cook as they please, be it in whatever shape, form or style they desire regardless of the methods and ethical means involved to get to be yourself.
My philosophy is simple in a certain respect, and I prefer using more ethically obtained meat, vegetables and just products in general, knowing that what you are using has come from a good, honest area is just comforting consciously. We cook with our heart so if I felt I was using produce I didn’t like well it just wouldn’t be a true dish in my heart. I don’t conform to any one set style, and I believe nowadays with so many books, social media and all the other means of obtaining culinary knowledge we have a huge advantage and should use such information the best we can and use it to create our own style, our own unique food. I am no master of food and never will be, however, I believe I am a master of my food and this is all that matters, continuously bettering myself, never losing focus, passion or ambition.
