My name is Marco Tola, and I’m from Sardinia Italy. I started in the industry at the age of 21.
I get inspired by the beautiful products that nature gives us. The amazing colours, structures and forms that pop right out of the ground. Everything is Art for me. Cooking is all about the food. But as well as the food, it’s about the pleasure and joy I bring to the people that eat it. My passion is in creativity, innovation and design. I’m also inspired by star chefs around the world.
I am not an artist, I’ve never considered myself to be anything more than a working Chef. But I think I can create beautiful things. I want to push the boundaries and cook exceptional dishes that I hope will be talked for years to come.
I love molecular gastronomy, working with fresh ingredients. I’m studying and trying new dish every single day.
My favourite ingredients are Chocolate, mango, beetroot, rice, fish, making fresh pasta, I love to get my hands dirty. But also different kind of cress, edible flowers, and forgotten vegetables.
My motto is “The Sky is the limit.”
Work until your idols become your rivals.
My dream is to open my own restaurant, or to have the opportunity to work for a star chef and show to the world what I’m about.
