My name is Tommy Fitzback, and I’m 25 years old, born and raised in Montréal, I studied Pastry and Cooking. I enjoy the sweet world much more than the salty one, but I can manage both. Some of my dishes are improvised well others are more thought out but everything is very simple and sometimes well presented. I had great mentors in Ignacio Del Rio and Rafael Zafra that influenced me, and I’d like to thank them as well as my teachers who taught me all the basics: Jean-Christian Sylvestre and Chef Ricciardi. I worked and travelled in a couple of places, but my experience in Mexico brought me here for a second time now. Thanks to my beloved girlfriend, Marie-Pier Grenier who supports me but most of all because she is so patient with me and my crazy lifestyle.
I have the opportunity to express myself, doing things I want to do and teaching good cooks and passionate guys as Jonathan, Diego, Daniel and Wilbert. On the other hand, I’m learning so much from them, and they have incredible knowledge and talent, and I’ll be forever grateful to these guys and all the people who taught me and made me who I am today. I could say that someday I’d like to have my own restaurant and make it one of the best in the world, but I feel It would be MY main goal to do what I love and follow my feelings. I’m always learning, always looking for knowledge and inspiration and hope to stay creative forever. We shall never lose the desire to get better and to grow as professionals and as human beings.
